At a time when writing cookbooks in Bengali was not a common practice, Praggyasundari Devi, in fragmented sections, wrote this legendary and monumental work on various types of both non-vegetarian and vegetarian cooking. The daughter of the Thakur family, Praggyasundari was the child of Hemendranath and the wife of Assamese literary figure Laxminath Bezbaruah. She embraced cooking as an art form. For her, cooking was a disciplined practice of creative work. To invite the world into this joyous creative endeavor, she took to writing during that time. This book is the timeless product of that joy.
In fact, the first volume of "Ammish o Nirammish Ahar" (Non-Vegetarian and Vegetarian Food) was published in the first decade of the last century. In this expansive work, Praggyasundari described over two thousand of her own original recipes, along with various culinary techniques from Bengali homes, across different volumes. This monumental work was published in three volumes. Beyond what was printed in these volumes, there were other cookbooks written by her, and some manuscripts of her cooking techniques were discovered after her death.
A new publishing plan has been devised to bring together all these writings in two well-organized volumes. The second volume contains a comprehensive, colorful, and varied collection of non-vegetarian recipes. It would be hard to imagine any non-vegetarian dish that is not included in this book, ranging from fish, mutton, chicken, eggs, prawns, and crabs to duck, venison, ham, and even pork, poultry, and rabbit. And there are numerous ways to cook all of these! Curries, kebabs, chops, cutlets, pies, pulao, sauces, fries, dolma, korma, grills, soups, stews—the list is endless! As in the first volume, this one has been updated for contemporary readers with appropriate annotations and a comprehensive alphabetical index of the recipes.
This second volume is truly a comprehensive cookbook dedicated to non-vegetarian cuisine.
